Momo are Nepal's unofficial national snack — pleated dumplings that arrived from Tibet and became a staple everywhere from Kathmandu backstreets to mountain lodges.
Classic momo are steamed and filled with minced buffalo (“buff”), chicken or vegetables, then dipped in a spicy tomato and sesame achar. Try them kothey (pan-fried on one side), fried, or as jhol momo, swimming in a tangy, warming broth.
Every local has a favourite momo shop, and the best ones are usually small and busy. Order a plate, watch them pleated by hand, and don't skip the chutney.
